Black Fin Tuna with Salmorejo Sauce


As a part of lab last night we tried a new recipe, thanks to Dean Nelson.  Dean Nelson was kind enough to donate some very nice Black Fin Tuna to the class.  The tuna was seared and then cooked briefly with the salmorejo sauce.  The sauce was nicely robust and played very well against the great tuna.

It was wonderful.  Thanks Dean Nelson for the addition to our class!
