Angel Fish Ice Carving from Garde Manger

As a part of our garde manger class the students do an ice carving.  We demo a piece for them and then turn them loose.  We have them all make the carving; an angel fish.  This year the best carving was by the group of Zach, Monse and Curtis. I think you will agree they did an outstanding job.

Until next time

  1. Hi Chef Bartosh, It's not as small as the one the team that I was on did last year.

  2. Hello:
    Thanks for the note.
It is just the photo. Last year and this year both we used half blocks or slicks for the carving; 20" x 20" x 10".

  3. Beautiful carving. I think it;s not easy to carve it on ice . Great job by that group.

  4. The team did do a great job. Ice is actually somewhat soft when it is properly tempered. So not too too difficult to carve even though it is a melting subject.
Thank you for your kind words.
    Best regards
