Week two of International Cuisine has had us visiting France. Some of the students have almost confessed to liking the food better than Italy. It has been very good. I could not fight them off to get a piece of the tart tatin last night.
I think I will wait to the end of the class to see which country I like the best.
So far we have made two fresh cheeses with one more scheduled. I must admit I am thinking of adding one more for the last week of class. Time will see if we can squeeze it in.
I have a few photos that I hope to upload later this week or next.

Good food last night. Nice flavors and aromas. Everyone a little rusty after being out for a month. Overall a good night, even if it did run late. Looking forward to tonight. Night two of the Middle East.

Class Start Date
Just a reminder that most of the classes start on Tuesday January 17, 2012.
Lab students, we will cook day one (evening one) so be prepared. Full uniform, knife sets, etc are required.
If you have not yet registered for class we are in late registration mode until January 18.
New students remember to get with me so we can block a seat for you in the August lab classes.
I look forward to having you in class.

Best of Award
Last year,Southern Elegance, the company, of one of our former students and the chair of our culinary advisory committee, Pat Mayberry, was selected as the Best Caterer by the readers of the Friendswood Journal. Southern Elegance has been nominated again this year.
