Flat bread



An Asian inspired flat bread made with whole wheat flour, and a roll in of scallions, cumin seed and coarse ground black pepper.  Spicy.  Was a good accompaniment to Greek style grilled chicken and couscous.

  1. I forgot to include a strong sprinkle of sea salt in the roll in.
    Basic recipe:
    1 c whole wheat flour, 1/2 c water mixed together to form dough
    Roll in: 3 finely chopped scallions, whle cumin seed, coarse ground black pepper and sea salt to taste.
    Canola oil for light coating of dough before adding roll in.
    form dough into 3 even rounds, roll out to 1/8 inch thickness using flour as needed.
    Lightly coat each round with canola oil, upside only.
    Add roll in ingredients evenly over the round.
    Roll up into a cylinder.
    Coil cylinder to form spiral tucking loose end underneath.
    roll out to 1/8 inch thickness using flour as needed.
    Cook on hot griddle until done.
